Ingredients:

1 can SPAM Korean BBQ flavor cubed (or any flavor)
Cooking spray
1 tbsp sugar
1 tbsp light soy sauce (2 tbsp if using plain SPAM)
1 tbsp mirin
Cooked white rice
Sliced avocado
Furikake
Kewpie mayonnaise
Sliced green onions

1. In a skillet brown cubed SPAM over medium high heat. Add in mixture of sugar, soy sauce and mirin and lower heat to medium. Cook until sauce has reduced and SPAM is glazed.
2. In a 9x9 baking dish, lay down a layer of white rice, sprinkle furikake, layer avocado, and top with SPAM. Drizzle mayo and broil on high for 2-3 minutes.
3. Remove from oven, top with scallions and more furikake. Serve with seaweed. Eat and enjoy!
