Furikake Chex Mix
My most highly requested recipe has always been for my Furikake Chex Mix. Back when I was a teacher I developed a recipe for this highly-addictive snack commonly found in Hawaii around the holidays. I started making it as a Christmas gift for friends, family, and coworkers and eventually those same people came around asking if I could take orders.
When I started my social media, I began selling Furikake Chex Mix to my followers. It was a fun way for people to actually try the food I was making. We received so many orders but it was hard keeping up with demand so we had to put it on hold.
In December of 2023, the owner of Pono Hawaiian Foods reached out to me looking to do a collab. He had a furikake product he wanted to bring more attention to and I realized this would be an ideal partnership considering how often I used furikake in my recipes.
The initial batch of furikake with Pono Hawaiian Foods has already sold out but you can still find their awesome, large spread furikake on their website.
Ingredients
For the soy butter sauce:
1 cup unsalted butter
3/4 cup sugar
2/3 cup karo syrup
2/3 cup canola oil
2 tbsp light soy sauce
1 tbsp Worcestershire sauce
3-4 Dashes of tapatio (or hot sauce of your choice)
2-3 cups each
Himemaru Japanese crackers
Rice Chex
Corn Chex
Bugles
Hanover Square pretzels
Honeycombs
Crispix
Macadamia nuts (optional)
Nonstick cooking spray
1 bottle @ponofoodsco furikake (silica packet removed)
1. Preheat the oven to 250°. Spray a large roasting pan with nonstick cooking spray. Add in all the cereals, crackers, pretzels, and nuts if using.
2. In a small pot over medium heat, melt butter and add in sugar. Stir to combine and add oil, Karo syrup and mix to combine until sugar is dissolved. Raise heat to medium high and stir in soy sauce, Worcestershire sauce, and hot sauce until it begins to bubble, 2-3 minutes.
3. Coat Chex mix with sauce and mix thoroughly. Place pan in oven and heat 10 minutes.
4. After 10 minutes, remove pan from oven and mix in bottle of furikake. Mix well and put back in oven. Stir the furikake Chex mix every 10 minutes for one hour.
5. Remove from oven and mix again and let cool. Eat and enjoy!
