Corned Beef Biscuit Bombs
Golden, fluffy biscuit dough stuffed with savory corned beef and melted mozzarella creates a snack that’s hard to resist. These Corned Beef Biscuit Bombs combine sautéed onions, juicy tomatoes, and flavorful Delimondo corned beef, all wrapped in soft biscuit dough and baked until perfectly golden.
They’re simple to prepare, require only a handful of ingredients, and make a great party appetizer, merienda snack, or quick homemade comfort food.
Ingredients
1 can **Delimondo corned beef
½ cup onion, finely chopped
½ cup tomatoes, diced
1 cup mozzarella cheese, shredded
1 can premade biscuit dough
1 tablespoon oil or butter
Salt and pepper to taste (optional)
1. Heat oil or butter in a pan over medium heat. Sauté the chopped onions until soft and aromatic. Add the diced tomatoes and cook for another minute until slightly softened. Add the **Delimondo corned beef and mix well with the vegetables. Cook for about 3–5 minutes until everything is evenly combined and heated through. Remove from heat and allow the mixture to cool slightly.
2. Preheat the oven to 350°F (190°C). Separate the premade biscuit dough pieces and roll each one flat using your hands or a rolling pin. Flatten them enough so they can easily wrap around the filling.
3. Place a spoonful of the corned beef mixture in the center of each flattened dough piece. Add a generous pinch of mozzarella cheese on top of the filling. Fold the dough over the filling and pinch the edges tightly to seal, forming a ball. Place each dough ball seam-side down on a lined baking sheet. Coat each in eggwash.
4. Bake for 12–15 minutes, or until the biscuit bombs turn golden brown and the dough is fully cooked. Allow them to cool for a few minutes before serving.
