Avocado Shake

While avocados are often used in savory dishes in the United States, across Southeast Asia they're just as likely to end up in dessert. From Vietnam's sinh to bo to creamy avocado drinks enjoyed throughout the region, ripe avocados are blended with milk, ice, and a touch of sweetness to create a rich, refreshing treat.

The first time I had one was at a small Vietnamese coffee shop in San Jose. I wasn't sure what to expect, but after one sip, I understood why it's such a classic. The avocado creates an incredibly creamy texture without needing ice cream, while sweetened condensed milk adds just the right amount of sweetness. Now it's one of my favorite ways to enjoy ripe avocados, especially on a warm day.

Ingredients

1 large ripe Hass avocado

½ cup whole milk

¼ cup sweetened condensed milk

1 cup ice

1. Cut the avocado in half, remove the pit, and scoop the flesh into a blender.

2. Add the milk, sweetened condensed milk, vanilla extract (if using), sea salt, and ice.

3. Blend for 45–60 seconds until completely smooth and creamy.

4. Taste and adjust as needed. Add more condensed milk for extra sweetness or a splash of milk if you'd like a thinner consistency.

5. Pour into a chilled glass and enjoy immediately.
