Pepperoni Pizza Crackers
Growing up, SkyFlakes were always in the house. SkyFlakes are a popular brand of crackers from the Philippines that are light and crispy. They come in a big blue tub (used to be a can) and I’m sure if you walk into a Filipino person’s pantry or ask a tita if you can peak into their LV purse, you’re sure to find some.
Since they are always around they make for a great snack and when I was little, I thought I was a little gourmand. I would take the crackers, spread some mayo and add parmesan cheese to them. This pepperoni pizza cracker recipe takes that idea and makes simple and easy pepperoni pizza crackers.
Ingredients:
4 packs of SkyFlakes crackers (classic flavor)
1/3 cup pizza sauce or marinara
1/2 cup shredded mozzarella cheese
Mini pepperoni slices (or cut regular ones smaller)
Italian seasoning or dried oregano (optional)
Red pepper flakes (optional)
Olive oil spray (optional for crispier finish)
1. Place SkyFlakes crackers on a baking sheet lined with parchment paper.
2. Add about 1 tsp of pizza sauce to each cracker and spread evenly.
3. Sprinkle mozzarella on top, just enough to cover each one.
4. Add 1-2 mini pepperonis per cracker. Sprinkle a pinch of Italian seasoning if desired.
5. Pop in a preheated oven at 375°F (190°C) for about 5-7 minutes or until cheese is melted and bubbly (can also Air fry at 375°F for 3-4 minutes for extra crispiness).
6. Let cool for 1 minute and enjoy the crunch!
