Tortang Talong
This Filipino recipe has been called the best egg dish in the world. This delicious egg dish features eggplant which is a very popular vegetable in Filipino cooking. Roasted and cooked with scrambled eggs, its a simple, smoky and creamy dish.
As a kid, I remember my grandma roasting the eggplant directly over our stove burners. This would fill the house with the small of burning eggplant. Despite this, this has become one of my favorite filipino meals. I would call this a core memory meal!
Ingredients
Eggplants that can fit into your air fryer
Extra virgin olive oil
2-3 eggs beaten
Cornstarch (optional)
Fish sauce (optional)
Salt and pepper
Soy sauce, tomatoes, green onions for garnish
1 lb ground pork
1/2 small onion
3-4 cloves garlic
I tomato diced
1. Puncture eggplants with a knife to prevent bursting in air fryer. Coat in oil and air fry for 30 mins at 400 degrees turning once or bake in oven 350° for 1 hour. Meanwhile cool garlic, onions, pork and tomato till cooked
2. Allow eggplant to cool and gently peel skin off of eggplant. Season with salt and pepper. Flatten eggplant gently with the back of a fork.
3. Dip eggplant into eggs. I add a tad of fish sauce to the eggs. Dredge in cornstarch which is also optional.
4. Fry in 2 tbsp oil over medium heat. Cook 3-4 minutes per side. I spoon pork mixture onto eggplant as it cooks. Serve with a side of garlic rice and your choice of toppings.
