Sisig Walking Tacos

If you love bold Filipino flavors and fun and hands-on eats, you’re going to love this Sisig Walking Taco recipe. I was inspired by the classic Filipino dish of sisig and one of my favorite things to order from the Mexican paleteria (ice cream shop), the walking taco. Filipino sisig is the ideal topping because it’s traditionally made with chopped pork (like pig’s head or belly), seasoned with calamansi (Filipino citrus), onions, chili peppers, and sometimes topped with a sizzling egg. It’s rich, flavorful, and usually enjoyed with rice or alongside a cold drink.

This recipe takes the flavors of sisig and transforms them into a walking taco for a creative Filipino fusion dish that’s easy and fun to make at home. Even better? We’re making it easy by using Trader Joe’s Pork Belly, which cuts down on cooking time without losing that crispy, juicy pork flavor. It’s the perfect party food, game day snack, or weeknight dinner when you want something fun and different.


Ingredients

2 packs Trader Joe’s Pork Belly, cooked according to package instructions ( or feel free to boil and fry up your own strips of pork belly)

1 tbsp oil (optional, for crisping pork)

½ onion, finely diced

½ red onion, finely diced

2 cloves garlic, minced

1–2 Thai chilis (or jalapeño), finely chopped (optional for heat)

2 tbsp soy sauce

1 tbsp calamansi/lime juice if available (I used my Tastebud Calamansi Barbecue Sauce)

1 tbsp mayonnaise (optional, for creamy sisig style)

Small bags of corn chips (I used Filipino brands)

Toppings: green onions, cilantro, lime wedges, nacho cheese (optional), guacamole (optional)

1. Prepare the Trader Joe’s Pork Belly according to package instructions. For extra crispiness, slice into small cubes and pan-fry in oil until golden brown.

2. In the same pan, sauté onions, garlic, and chili peppers until fragrant. Add the crispy pork belly back in. Stir in soy sauce, vinegar (or calamansi), and sugar. Mix well and cook until the flavors meld together.

3. Turn off the heat and stir in mayonnaise for a creamy sisig texture. Top with chilis and red onion.

4. Take small bags of chips, gently crush them, and cut open the side. Spoon hot sisig mixture directly into each bag.

5. Top with green onions, cilantro, cheese, or even a fried egg for extra indulgence. Serve immediately.
