No Bake Sushi Bake

I love sushi bake, but sometimes I don’t need a whole casserole dish of it. Sometimes I need lunch in five minutes.

That’s basically how this no-bake sushi bake happened. It has all the creamy, savory, spicy flavors I like in a sushi bake, but there’s no oven, no giant tray, and no waiting around for anything to bake.

Just warm rice, a quick miso tuna mixture, furikake, and toasted seaweed for scooping.

And apparently the internet was into it too, because this one ended up going viral.


Ingredients

For the rice

1 cup cooked sushi rice or short-grain rice, preferably warm

1 tablespoon furikake

Optional 1 tablespoon rice vinegar

For the miso tuna

1 5-ounce can oil-packed tuna, drained

2 tablespoons mayonnaise

1 tablespoon white miso

1 teaspoon soy sauce

½ teaspoon honey

1 to 2 teaspoons rice vinegar

For serving

Roasted or toasted seaweed sheets

Sliced green onion

Furikake

Sliced avocado

Optional sliced cucumber

Crispy shallots

1. Add the warm rice to a bowl and add rice vinegar if using. Top with furikake.

2. In a small bowl, combine the drained tuna, mayonnaise, white miso, soy sauce, rice vinegar and honey. Mix until everything is creamy and evenly combined.

3. Spoon the tuna mixture over the seasoned rice. Layer sliced avocado. Top with green onion, furikake and crispy shallots.

4. Serve immediately with roasted seaweed. Grab a piece of seaweed, scoop up some rice and tuna, add sliced cucumber or pickled ginger and eat it like a very lazy hand roll.
