Furikake Ramen Snack
Think rice-cracker party mix meets ramen. This snack is all crunch + umami: uncooked ramen noodles broken into pieces, tossed with Chex, then baked with a sweet-savory butter glaze and finished with furikake. Perfect for road trips, holiday snack jars, or movie nights.
This recipe is a scaled down version of my viral furikake snack mix recipe. The secret is to use the most basic of instant ramen bricks. I’m talking about the thin and brittle versions because it will crisp up better in the oven. This is also great with the addition of pretzels, peanuts, or Bugles. Just be warned, this will not last long in your house.
Ingredients
2 packs instant ramen, seasoning packets discarded
4 cups Chex cereal
1/4 cup unsalted butter, melted
1/4 cup granulated sugar
2 Tbsp soy sauce
2 tbsp corn syrup
2 Tbsp neutral oil (helps crisp)
1-2 dashes Tapatio (optional for heat)
2–3 Tbsp furikake or more (Nori komi style is ideal)
1. Heat oven to 250°F (120°C). Line a sheet pan.
2. Break ramen into bite-size chunks with your hands and add to a big bowl with Chex (and any add-ins).
3. In a small saucepan over low heat, melt together butter, oil, soy sauce, corn syrup and sugar until dissolved.
4. Pour the glaze over the dry mix; toss thoroughly to coat every piece. Sprinkle generously with with furikake.
5. Spread in an even layer on the sheet pan. Bake 45–55 minutes, stirring every 15 minutes until dry and crisp.
6. Cool completely before storing.
