Chicken Adobo

Chicken adobo is my favorite Filipino comfort food and this easy to follow recipe has well-rounded flavor that is savory, tangy and a little bit sweet. The chicken wings are my protein of choice when it comes to making adobo because it renders so well into the sauce. This recipe tastes even better the next day and would be good as the start of some adobo fried rice

Ingredients
3 lbs chicken party wings
1 head of garlic minced
1 cup low sodium soy sauce
2/3 cup cane vinegar
1-2 tbsp oyster sauce
2 bay leaves
2 stalks sliced green onion (whites and greens separated)
1-2 tbsp dark brown sugar
1-2 tsp ground black pepper
2 tbsp avocado oil
Fried garlic garnish (optional)

1. In a large saute pan over medium heat, add oil. Add in chicken wings and sauté chicken in batches until well browned. Season with salt and pepper.
2. Add in minced garlic, the whites of the green onions and sauté 1-2 minutes.
3. Once the aromatics are fragrant, add in vinegar, soy sauce bay leaves, sugar and more black pepper. Scrape up any fond from the bottom of the pan. Mix to combine, cover and lower heat to simmer for 25 minutes.
4. After 25 minutes, uncover and mix. Cook and cover on low again for another 15-20 minutes. Garnish with green onions and fried garlic. Serve over rice.
