Filipino Spanish Omelette

Filipino Spanish Omelette is the one dish I think every Filipino dad knows and mine was no different. It’s just sautéed onions, tomato and eggs but there’s fish sauce and it’s served over white rice. The simplicity of this dish is what makes it so delicios. My dad was always super busy so usually any food I got from him was fast food. But when he did have time, I’d ask him to make this for breakfast, lunch or dinner. I think I enjoyed it so much because it was like one of the few times I’d see him slow down during his hectic days. Ironically, I rarely saw my dad in the kitchen and now my kids see me in the kitchen all the time.

Ingredients

1-2 tomatoes sliced into 1/8
1/4 onion sliced
4 eggs
1-2 stalks green onions sliced
2-3 cloves garlic minced
Fish sauce
Vegetable oil
Salt and pepper

1. In a medium skillet, heat oil over medium heat. Add in onions and sautee until soft 3-4 minutes.
2. Add green onion whites and garlic and sautee another 1-2 minutes till fragrant.
3. Add the tomato and, using the back of the spatula, press down gently to flatten and release the juices. Cook until tomatoes have softened. Whisk in beaten eggs and fish sauce.
4. Stir the eggs around and gently fold in eggs till cooked. Season with salt and pepper to taste. Serve with steamed rice.
