Tortang Giniling

Tortang giniling is a super simple and easy filipino beef omelette. You won’t find this meal on any menu at a Filipino restaurant. This is a homestyle dish my parents would make at especially for merienda, or mid-afternoon snack. This merienda can become an entire meal with a bed of rice or even sandwiched between bread. And the perfect accompaniment with this is some banana ketchup.

Ingredients
Canola oil
1.5 lb ground beef
1/2 an onion finely chopped
5 garlic cloves minced
1 tomato diced
5 scallions diced
12 eggs
1 tbsp fish sauce
Salt
Pepper
Worcestershire sauce

1. Heat 1 tbsp of oil over medium heat and sauté onion and then garlic for five minutes. Stir often to prevent burning and add in diced tomato. Cook tomato down till all the liquid is gone.
2. Add the beef and break into fine pieces until browned, 6-8 minutes. Add in salt, pepper, and Worcestershire sauce. Drain fat and let beef mixture sit in the refrigerator to cool for about 10 minutes.
3. Beat a dozen eggs and add 1 tbsp fish sauce. And ground beef mixture and scallions and mix to incorporate.
4. Working in batches fry a 1/2 cup of beef and egg mixture one at a time. Add oil to medium-low heat and cook on one side for 2 minutes, flip and cook an additional minute.
5. Enjoy with a side of rice and banana ketchup.
