Jalapeno Cheesy Hard Boiled Eggs
When it comes to the food number one favorite food I make for myself, it’s gotta be eggs. They are so versatile and can be prepared in so many ways. They are legit one of my favorite snacks, and this is one of the easiest ways to make them even more delicious.
Jalapeño Cheesy Hard Boiled Eggs take simple hard boiled eggs and turn them into a crispy, cheesy, spicy bite that tastes somewhere between a deviled egg and a jalapeño popper.
Hard boiled eggs are sliced in half, placed onto melting mozzarella cheese, then topped with fresh jalapeños and crispy bacon until the cheese gets golden and crunchy around the edges.
They’re high-protein, low carb, ridiculously satisfying, and perfect for quick snacks, meal prep, or late-night cravings.
Ingredients
6 hard boiled eggs
1 cup shredded mozzarella cheese
12 slices pickled jalapeños
4 strips bacon, cooked and chopped
black pepper to taste
1. Bring the water to a boil over medium-high heat. Place eggs into pot and boil for 10 minutes. Immediately transfer the eggs into a bowl of ice water for at least 5 minutes.
2. Peel and slice each egg in half lengthwise. Pat dry slightly so they crisp better on the cheese.
3. Heat a nonstick skillet over medium heat. Add sliced jalapeno. Sprinkle small piles of shredded mozzarella directly onto the pan. top with chopped bacon. As the cheese starts melting, place an egg half cut-side-up onto each cheesy mound.
4. Cook until the cheese becomes crispy and golden around the edges.
