Korean BBQ Slow Cooker Short Ribs

I love me a set-it-and-forget-it meal and these Slow Cooker Korean Beef Short Ribs are one of my favorites. Boneless beef short ribs that I picked up from Costco are slowly cooked in a sweet and savory Korean-inspired sauce with garlic, ginger, and soy sauce until they're fall-apart tender.

I like to quickly sear the boneless short ribs first to get some color and extra flavor, but after that, the slow cooker does all the heavy lifting. The beef cooks low and slow in a Korean-inspired sauce while the baby carrots and potatoes soak up all that flavor.

Cook it on LOW in the morning and by dinner you've got tender beef, vegetables, and plenty of sauce ready to spoon over rice.

Ingredients

3–4 lb boneless beef short ribs

1 tsp kosher salt

½ tsp black pepper

1 tbsp neutral oil

½ large onion, sliced

4–5 cloves garlic, minced

1 tbsp grated ginger

½ cup soy sauce

¼ cup brown sugar

2 tbsp mirin

1 tbsp sesame oil

½ Asian pear, grated or ½ apple

¾ cup beef broth

1 tbsp gochujang, optional

2 cups baby carrots

1 lb baby potatoes or Korean radish, optional

Green onions and sesame seeds, for garnish

1. Season the boneless short ribs with salt and black pepper.

2. Heat the neutral oil in a skillet over medium-high heat. Sear the short ribs for about 2–3 minutes per side until browned. You don't need to cook them through.

3. Add the sliced onion to the bottom of the slow cooker. Place the seared short ribs on top.

4. In a bowl, mix the garlic, ginger, soy sauce, brown sugar, mirin, sesame oil, rice vinegar, grated Asian pear, beef broth, and gochujang.

5. Pour the sauce over the beef.

6. Add the baby carrots and baby potatoes around the short ribs. The beef does not need to be completely submerged in the liquid.

7. Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the short ribs are fork-tender.

8. Remove the beef and vegetables. For a thicker sauce, transfer the cooking liquid to a saucepan and simmer for 5–10 minutes until slightly reduced.

9. Spoon the sauce over the short ribs and finish with sliced green onions and sesame seeds.

10. Serve with hot rice and make sure you get some of that sauce on there.
